These were actually pretty easy to make--just a little time consuming. It's like the best of both worlds: a cookie and a brownie. They're best warm, but Nick just ate one cold and he liked it.
Start by making the cookie dough--my favorite is the Nestle Tollhouse Recipe:
Ingredients:
- 2 1/4 cups all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 cup butter, softened
- 3/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 2 cups chocolate chips
Directions:
- Combine flour, baking soda, and salt in a small bowl.
- Beat butter, granulated sugar, brown sugar, and vanilla extract in large mixer bowl until creamy.
- Add eggs, one at a time, beating well after each addition.
- Gradually beat in flour mixture.
- Stir in chocolate chips.
- Drop by rounded tablespoon onto ungreased baking sheets.
Then, I made a box of brownies (Duncan Hines fudge-y kind). Let them cool completely before cutting the middle into 1 inch squares.
Then, make your cookies! Take one cookie dough ball, make an indentation with your finger and shove the brownie square in it and top it off with another cookie dough ball. So basically, it's a gigantic cookie= two cookies and a brownie in one!
I baked them for 14 minutes on 350 and on parchment paper so they wouldn't burn. You can only fit 6 on a cookie sheet though so it took a while.
